Cultivation methods, facilitated manual harvesting, and continuous cycle cold press technique ensure the whole process complies with the IGP Sicily certification requirements.

TASTING NOTES: Oil with a slightly cloudy appearance, a gold color and some intense green reflections. Arugula and tomato notes. Medium fruity, with well-balanced bitter and spicy sensations.

PARING: Ideal to dress grilled meat, salads, bruschetta, and legumes dishes.

TIPS: It is recommended to use raw.
